Roasted cauliflower steaks

Caulifloweris a delicious low-carbohydrate vegetable. Whenroasted, it becomes sweet and caramelises around the edges. Serve these steaks with aleafy green salador alongside any vegetable side.

Ingredients

1largeɳ󾱳ٱcauliflower

Juice of 2lemon

2–3garlicclove(finelygrated) — more if you like garlic!

Extra-virgin olive oil— about ¼cup

Saltto taste

Optional

1handfulof unsalted,roastedhazelnuts(coarselycrushed) OR 1handfulofpine nuts(cooked in asmallamount ofextra-virgin olive oilto very lightly “brown” them — about 2 minutes atmediumtohighheat — need to watch them as they can burn quickly.

Prepare a simple salad to go alongside

Romaine lettuce/otherlettuce

Choppedcorianderto taste

1⁄2avocado—cutinto chunks andmixwith the juice of 1⁄2lemon

Mix with

Balsamic vinegarto taste (not too much, as it contains quite a bit of sugar)

Extra-virgin olive oil(drizzleover)

Eat as much of the lettuce as you like. Just don’t overdo theavocadoor the oil/balsamic.

Method

Preheatovento 200ºC

  1. Cutthe cauliflower into 3⁄4-inch thick steaks. You should get at least 3 “steaks” per head of cauliflower.Cutlongitudinally. Keep the end pieces and the bits that fall off and add them to the roasting pan too.
  2. Place into a lightly oiledlargeroastingpan/dish.
  3. Mixthe olive oil, lemon juice, garlic, and salt to taste (about two pinches) and thenpaint/drizzleover the cauliflower steaks on one side.
  4. Thengrill/roastthe cauliflower in a hotovenfor 15 minutes and then turn over andpaintthe other side androastfor another 12 minutes (a few minutes longer if you prefer — you can test it as you go).
  5. Sprinkleover the nuts and eat.
